Ingredients that Will Make Your Taste Buds Dance
Before we dive into the recipe, let's gather all the ingredients you'll need:
- 1 large Chicken Beast
- Jar of Pickles
- 1 cup of Plain Flour
- ½ cup of Corn Flour
- 1 cup of Buttermilk
- 1 large egg
- The F’ing Hot One
- Brioche Bun
- 1 tbsp butter
- 1 tbsp dark brown sugar
Let's Get Cooking!
1. Start by butterflying the chicken and cutting it in to chicken tender size strips.
2. Put your chicken into a zip lock bag, submerge in juice from the pickles and leave in the fridge overnight. This brine will ensure the chicken is tender, juicy and will add some flavour into the meat (parts of the chicken may turn white and have a tint of green, this is completely normal, it’s the brine reacting with the protein!).
3. Preheat BBQ to 220c and set up for indirect cooking. Jake uses the Traeger Pro 575 BBQ.
4. Add your flour and corn flour to a bowl and mix.
5. To another bowl, add your egg, 2 teaspoons of the Cornish Smoke Squad's F'ing Hot One hot sauce and one cup of buttermilk and mix this together.
6. Once the chicken has marinated in the pickle juice overnight, transfer it to a paper towel-lined plate to drain any excess oil and pat dry.
7. Dredge the chicken in the flour, then the egg mixture and then the flour again
8. Grill the chicken for around 15-20 minutes, until around 65c internal
9. Heat up vegetable oil in a saucepan, you want the oil to be around 175c
10. Dredge the Chicken again in the flour, egg mixture, flour
11. Carefully add the chicken to the hot oil, let it deep-fry for a few minutes, until it is golden brown and at least 74c internal.
12. Add your butter, brown sugar and 2 teaspoons of hot sauce to a pan and gently cook for a few minutes until melted and all of the ingredients are incorporated.
13. Dip your chicken in this buttery mixture, covering all sides.
14. Add your chicken to your brioche bun and top with pickles for a tangy kick.
